Chayote and Spinach Soup


Start the week by giving your body a soup full of energy.

Chayote benefits:

Ingredients (2 servings):


  • ¼ chopped onion.

  • Olive oil (a splash).

  • 1 garlic, peeled.

  • Salt to taste.

  • Pepper to taste.

  • Scent herbs (to taste).

  • Water, for liquid texture (optional).

  • 3 chayotes peeled, cooked and diced.

  • A fist of spinach, washed and disinfected.

Steps:

1. In a saucepan add olive oil, cook the onion and garlic, until it is citroned. ⠀

2. Add the chayotes, season with salt and pepper. When they are shiny remove from heat. ⠀

3. Blend everything, and add the spinach. Add water little by little (optional), until it becomes less thick. ⠀

4. Return to the saucepan, and season. Add scent herbs (optional) for seasoning. ⠀

5. Once hot and seasoned, serve. Decorate with a little balsamic oil.
