Blackberry and Cardamom Pancakes
Today I want to share a recipe that I love. I love eating oats in different presentations, and I do it because I like the taste, beyond the great benefits that it has.
I love all pancakes, whether they are from flour or from oatmeal, but today I wanted these and followed my intuition. I invite you to try if you are in the mood for something sweet and delicious for breakfast.
Recipe
Ingredients:
1/3 cup oat flakes
1 egg
1/4 cup blackberries
Vanilla essence (optional)
1 splash of almond milk
1 tablespoon of monkfruit
Cardamom Frosting:
3 tablespoons of greek yogurt
1/2 tablespoon of cardamom
Steps:
1. Mix all the ingredients in the blender.
2. Heat a frying pan with little ghee or whatever you have at home to avoid sticking. (It is very important that the pan is hot so that the pancakes do not stick.)
3. Make the pancakes one by one. (I generally don't use a scoop or cup to measure the amount, but if you want them to come out even, you can use a scoop or a cup.)
4. For the bitumen: mix the yogurt with the cardamom and put a teaspoon between the layers.
5. To finish, add some blackberries.
